Some people try their best to eat well on the go, while others health-minded folks plan their meals a week in advance. But one Durham, NC woman blows them all out of the water: 27-year-old Lacy Reardon did a whole week of meal prep – and it only took her seven days.
“It really just takes dedication,” said Lacy, while continuing to chop the package of mushrooms she plans to use for one meal, and maybe an omelet later if she’s lucky. “If you really want to do it, you’ll buckle down and do it.”
Lacy went on to explain how she finds the time to plan for and prepare a week’s worth of food in only the time it takes for the week to go by.
“It’s all about balance and planning, you know?” Lacy explained over a pot of steaming brown rice that will absolutely not be enough for more than one serving. “Like, if I plan to make a stir fry on Monday, I’ll plan to make a salad on Tuesday, so I can just buy a bunch of carrots and cut up enough for Monday and then get a little bored and tired and just decide to cut up the rest on Tuesday.”
“It really doesn’t take that much effort!” she added, before abandoning her kale massaging operation to scroll on Twitter a bit before putting most of the kale back in the fridge.
Friends of Lacy are impressed at her commitment to meal planning.
“I’m so busy most days of the week, I can’t even fathom how Lacy has the time,” said Barri Wieseman. “How does someone with a full-time job, hobbies, a gym membership, and a girlfriend find the space to meal prep for a whole week in just a whole week?”
“Even when I cook at home, I can only prepare for one meal at a time. Lacy’s doing seven meals at a time, over seven days,” added Barri. “She’s a wonder woman.”
But Lacy remains humble.
“It’s not magic, it’s just hard work,” she said. “You just plan your food for the week, buy a bunch of groceries accordingly, then think about cooking them all at once but ultimately do it on meal at a time.”
“If I can do it, anyone can do it,” Lacy added.
